Vinification: the harvest of Cabernet Sauvignon is usually conducted during the third 10 days of September. The grapes are vinified in steel tanks, with maceration at a temperature of 24-26°C for 12-18 days.
Maturation: in steel tanks and large oak barrels for about 30 months.
Colour: intense ruby red with garnet hues.
Bouquet: wide in which stand initially balsamic notes (eucalyptus and rosemary), then hints of plum jam and blackberry, finally enriched by spicy notes, black pepper, nutmeg, chocolate and vanilla.
Taste: ethereal, harmonious, well-structured, rightly tannic, with a pleasant aftertaste of ripe fruit, lingering.
Best with: red meats, game, strong cheeses.
