The grapes from the oldest vineyards on the rolling hills Astigiane are absolutely the most sugary ones and they maintain a high level of quality even in less favorable years, choosing, among the vineyards,the lots of clusters with the best indicator of ripeness.
The winemaking process is started in vertical barrels with the programming of the leaching and with the temperature control.
After about ten days of maceration the racking takes place. The aging, once the malolactic fermentation is completed, takes place in small French oak barrels of 225 liters.
The stay time is decided from time to time depending on the year and the characteristics of the wine by organoleptic monthly controls. So its evolution is followed and finally the right time of bottling is decided.
Recommended in combination with tasty pasta dishes with sauces of meat or mushrooms. It goes well with red meat (braised, roasted) and game. Well with blue cheeses, seasoned and spicy.
